Limited Micro-Lot ESC5-5/6: 120-Hour Anaerobic Natural This lot was selectively handpicked on May 6th. The whole cherries underwent an extended 120-hour anaerobic fermentation in 225-liter sealed tanks. This intense process was followed by a 28-day solar drying period, allowing complex, sweet wine-like flavors to develop fully within the bean.
